I did mine a few years ago and after trimming out the joists just cut through, first with 4 drilled 10mm holes in the corners, then with an upcut blade in the jig saw from inside the loft. Having hung hundreds of the things, i tend to just manover the door in place on an angle instead of using anything to prop it up. To mark the position of the hinges i measure down the door to the top of the first hinge and add on 2mm to alow for clearence. It is however a good idea having some sort ...

Now thats some big shelves.
As long as you're not planning on storing exceptionally heavy items on them, a well framed and supported 18mm ply will be perfectly adequate, and just normal Far Eastern ply'll do the job just fine.
