I did mine a few years ago and after trimming out the joists just cut through, first with 4 drilled 10mm holes in the corners, then with an upcut blade in the jig saw from inside the loft. Having hung hundreds of the things, i tend to just manover the door in place on an angle instead of using anything to prop it up. Now thats some big shelves.
As long as you're not planning on storing exceptionally heavy items on them, a well framed and supported 18mm ply will be perfectly adequate, and just normal Far Eastern ply'll do the job just fine.
