Hi, I recently purchased a mixer tap for the kitchen which has a pull out spray! joining plastic to copper

Hi, I have recently been joining plastic pipe to copper pipe using metal fittings. It seems though that after I push an insert into the plastic pipe it's almost impossible to get the copper olive over the end of the pipe without a lot of force. Anyone else had this issue or am I doing it all wrong? ...
