Single Ply

I'd stick a single ply fleece backed membrane over the top. And make sure you get a guarantee from the contractor. Should be able to get at least 10 year workmanship and product guarantee if they are any good!

Further advice

Certainly would. The only difference would be in the type of finish to the insulation board. Different waterproofing membranes are compatible with different finishes on the topside of the insulation. Again, speak to the insualtion manufacturer who will guide you as to which type you need.

You need a Polyisosanurate Insulation Board (PIR for short) which are available from Kingspan or Celotex. Condensation

This type of roof construction is known as a cold roof. The void between the insulation board and your roof deck MUST be ventilated. Install either trickle vents (leading to the outside) or some form of mechanical ventilation in the roof. This should sort your problem.
