Exposed Ceiling Joists After Taking Down Lathe and Plaster Ceiling

We've just pulled down a lathe and plaster ceiling and was thinking of replacing it with plasterboard between the joists and leaving a section of joist exposed. Has anyone done this to their house? Will it affect buildings insurance? Any tips?

Many thanks
