The plug and socket you have are NOT compatible, they are desigend not to fit for a reason. Have you looked in the cistern? What happens if you take a sample of water and leave it (in a glass) on a shelf? Try the same with the hand basin.

The toilet bowl is the only place you would expect to see water from the "mains" standing in the open for a few hours, so I wonder, fill a glass from the handbasin, leave it to stand for a few hours, what happens? It may be nothing to do with the toilet.

You don't want to connect to the wrong pipe, call a specialist septic tank pumping company and ask them to come and look. (Septic tanks must be pumped out every few years.)

What you have is called 2 way switching. (If the three switches you mention control the same light or lights at the same time, you have 2 way and intermediate) There is no such thing as a smart 2 way switch. (Lighting is not a ring main) In your case, you have to provide your own terminal. Put it in a wago or a single connector block. Do NOT cut it off.

Sofit vents. You may already have them, but they could be blocked with all that glass fibre insulation you have. You will have to have a look.
The other thing is, where is all the damp air coming from? Lofts are usually cold and windy.

It is probably condensation, there should be ventilation in your loft, vents in the eves at least.

As you said it depends on the weather where you are, since I am not there I do not know what the conditions are, the longer you leave it the better it will be.

I searched and I found videos of how to programme your programmer dating back 12 years ago, so yes the design is old, but you can still buy them today.
