I have used the Bedec barn paint and cant recommend it enough, its easy to apply and dries quick and can be used on various surfaces and its available in quite a few different colours.

It sounds like the paint is drying to quick, open as many windows as you can to make it cooler in the bathroom as your painting, you could thin down the first coat a little with clean cold water.

You need to paint over the water stain mark first using a stain block paint - Zinserr stain block, allow to dry and then emulsion your ceiling.

As previously said you never paint gloss over gloss, it doesnt adhere to the surface, you need to undercoat first before putting on the gloss, and if the gloss is old that can half the problem with paint yellowing, you could always paint it with radiator paint

Old paint will smell, oil based paints smell, until they completely phase out oil based paints and every paint goes eco friendly paint will always smell.
But there is a lot more eco friendly paints available and I would say in the next 5 years all oil based paints will be phased out.
