The plasterer should have checked the walls for flatness with a straightedge, particulaly around worktop/unit areas in a kitchen. The deviation of 8mm will fill with bonding plaster, then "rule off" wet plaster with featheredge(straightedge) this leaves plaster flat and level with existing...
