I'm fitting out my bathroom and want to replace the wooden panellened ceiling.
Is it ok to put plasterboard up then skim over with some plaster to get a smooth finish to paint on or will this soak up the moisture?

Also, any tips on plastering might come in handy!

no problem at all. thats the way its usually done. just use a decent quality paint thats suitable for bathrooms to seal it.

Go to our top coat plastering project and read carefully. Spend a few quid on a piece od plasterboard and a bag of plaster to practice on first. The money this costs will be saved 100 times over if you mess up the ceiling. PLastering is a trade and requires practice, practice and more practice.

Is it necessary to put PVA on the plasterboard before I skim?

no. just make sure that you tape the joints to help prevent cracking. there is no need to pva plasterboard.
