Ceiling Dripping Water After Leak Repair Caused by old Pipe Seal

The ceiling in my kitchen started to drop water about 10 days ago. I called an emergency plumber who came the next day. He found the source of the leak in my roof (an old pipe seal), and fixed it.

Sure enough there is no more water coming from the pipe. Although it seemed it had been leaking for almost a year. Luckily there is visibly very little damage to the kitchen ceiling so the plumber suggested I pierce the ceiling to drain the standing water and leave it to dry, then patch the ceiling up. Sounded like a great solution so I did.

It has been around 10 days now and there is roughly 1 pint of water coming from the small hole I created each day, draining into a bucket. It does seem to be decreasing although hard to tell.

Is this likely to still be water soaking through as it dries out or is that too much water and there is intact a different leak to solve?? If it's still drying, how long will that take?

Any help much appreciated.
