Moulded edge trim for shelves in alcove

Hi there everyone - noob here - hope you can help.

I'm making bookshelves for our living room alcoves.

I would like them to have an 'Astragal' moulded timber edge.
I thought: Plywood sheet + moulding.

Ply sheets are (as we know) 18mm or 24mm thick. And yet the smallest trim I can find is 21mm. I'm sure I'm not the first to want to do this(!!!) so, am I missing something?

Once you have decided on the thickness of your shelf find a carpenter who can router an appropriate edge moulding.
