Damp from shower leak

As with another user I have had a leak from my shower waste. I have had mould problems for quite a while and after cleaning it, regrouting etc it keeps coming back. I have now noticed peeling paintwork and damp on downstairs wall below shower so have ripped the shower out to find it is leaking and the chipboard flooring underneath is soaked and rotten so it must have been leaking for some time. I have cut chipboard flooring out around damp area but walls and joists are very damp and top surface of one joist could be slightly rotten. Joists are now, after a couple of days, drying out but walls still seem quite damp. I am going to chop back plaster until I get to dry wall but is there anything else I should do. Should I cut out and treat joists where they are damp or just wait until they dry out.
