Using SIPs in a confined space

Hello

I'm thinking of replacing my garden shed with a garden office, and am considering using SIPs. However, the space where is will go is very confined, with border fences on three sides. This means that the office would have to be constructed from the inside, so I was wondering if this is possible with SIPs. Can they be screwed together from the inside only, or do they need to be screwed from both sides? Also, is there any way to weather-proof the SIPs, especially at the joints? Finally, can SIPs be made rodent-proof, as my current shed has holes where it has ben gnawed through.
