removal of chimney breast

Hi to all,
I would like some advise on the removal of a chimney breast in the kitchen of a victorian house. We intend to remove it and insert a RSJ.
whats the best way to approach this, start at the top or the bottom using achrows to support........? advise appreciated.

Do you intend to keep it above?
The simplest way is to take the whole thing down, starting at the top, but is it iternal/external?
So many variables!
if you are planning to take it out in the kitchen only and insert an RSJ, you will need a structural engineer to calculate the steel sizes and positions for BC, who will have to be involved
