New Kitchen Advice

I have a large kitchen/dining room with 10'
high ceilings.

I am planning on a complete overhaul: kitchen thrown out/walls skimmed/painted/new flooring(currently wooden flooring)/new lighting and new kitchen units/appliances.

Any advice on the order I should get the work done?
Is there anywhere that would do the whole lot for me?
I'm in Edinburgh

Throw out.

Skim.

Plumbing and Electrics.

Units.

Paint.

Floor.

you will have to have your kitchen planned first ,ie for sockets and plumbing.
once done then skim
then floor
then units

While your are at it, pull down the ceiling, line with a plastic membrane then fit 50mm thick polystyrene under, finish with plasterboard and a skim coat.
This will result in a much warmer room.

I have always wanted to know this. Would using the polystyrene in the ceiling be classed as a fire risk and not allowed in building regs?
I am a complete idiot so don't take my questioning personally :-)
