floor joists different heights

Hiya new to this site.
Some years ago we had builders in to put an extention on the house and we encorporated what was the old v. small kitchen into the living/dining room, however the floor in the old kitchen is slightly higher, it has a honey come wall underneath the floor where the original wall was. We would now like to have the floor levelled. Can this be done by planing the higher joists to slope to the lower ones, its only approx 1 1/2cm difference and around 2.5m in length. however the joists donot run in that direction, they run across the floor.
