Sanding and Oiling B&Q Beech Solid Wood Worktop Query

I recently purchased a worktop (Cooke & Lewis Beech Solid Wood Square Edge Kitchen Worktop from B&Q). My question is regarding both sanding and oiling. The instructions state: 'start with 100, 150, 220, finishing off with 600 grit sandpaper'. I've purchased one sheet of each, hoping that this is enough for the 3m by 600mm by 27mm surface area? Although it mentions oiling, the instructions aren't at all clear as to when I should oil the worktop. Would I sand with the 100, then 150, then 220, then 600, then oil the worktop with Danish oil 3 or 4 times, or oil between sanding, or oil in tandem with using the final 600 grit sandpaper. I've read online that when 600 grit is used you can't then re-oil?
Also, with regards to cleaning the worktop of dust prior to oiling, is it okay to use a damp cloth?
