Reducing Size of Serving Hatch for new Kitchen

Hi
I have a serving hatch between my kitchen and lounge, and I am shortly going to fit a new kitchen.
The wall units are slightly wider, so I would like to narrow the serving hatch by about 6" on one side. I am wondering the best way to go about doing this.
I will build a frame and then cover it, but not sure what is best to cover it with - plywood or plasterboard? Also, the end would need covering too, as I cannot get timber that is the same width as the hatch, so what is the best way about this?
