I need to lay a 6in slab for a hot tub and would like to use the materials I have lying around. I have plenty of 20mm aggregate and soft sand. Normally sharp sand is used of course, but would it cause a problem if I used soft sand ? I will also be putting in a reinforcing mesh.

You know the answer already because its in your post. Building sand doesn't make good concrete.
