Getting the right coloured mortar

I have been trying to repoint sections of my patio for a couple of weeks now with disastrous results. I bought some ready mixed dry mortar and thought that that would be ok - it dried almost white and has been a nightmare to remove. So I went to the builders merchants and bought a bag of cement and some sand. I have made 3 samples of mortar ; 1:3, 1:4 and 1:5. They have each dried a greyish colour and I need to make a buff coloured mortar.
It must be the easiest thing in the world to do, can someone help please?
