Create damp-proof, plastered wall on top of 300-yr block

I am working on a 300-year-old house.
Want to put a stud/plasterboard finish on top of the existing single skin block work, that can be papered/painted.
I want to create a cavity between the old and new layers for
damp-proofing.
Any opinions on the best way to do this
