Table Varnish for Restaurant - Any Quick Drying Solutions?

Hi,
Got a bit of a different one here. Run a restaurant in which we have wooden tables. I think when they were put in (8 months ago) they weren't treated properly. They are kind of sticky now, is the best way to describe them. I asked in a local wood shop and they said they would probably need a decking varnish applied which would take about sixteen hours to dry and would need two coats.
Now the problem is is that we don't have a day when we are closed so 16 hours is a long time. Is there an alternative, and if not what is the best way to go about treating the tables?
