What to use as a Kitchen Spashback for an Uneven wall?

Hi
We need to decide on a kitchen splashback - were going to use tiles however, a tiler advised against this due to the uneven nature of our wall...any other suggestions?

dryline the wall using 9,5mm plasterboard, this will give you a straight wall to tile to, or hack off the plaster and replaster it straight

Well, if this had been thought about a bit more prior to our new kitchen being installed, we could do as you suggest, however, the units, worktop and decoration have all been done!
