Thoughts About Plastic Cladding in Kitchen

Hey guys, total noob here and wanted some advice from experienced decorators/builders.
I am renovating the house and had a new kitchen fitted. The kitchen is not very wide at all, about 6ft. It is almost 30ft long. On one side we have all the fittings, cupboards, fridge, sink etc. The other side only has a couple of cupbords which are high up as they can be and in the middle.
I am thinking of putting plastic cladding up against the whole length of the wall where there are cupboards in the middle. I've had cladding put up on the bathroom ceiling and think it looks good.
What are people's thoughts? Someone also mentioned cladding may be a hazard in the kitchen due to cooking etc, anybody know more about this?
Any help will be much appreciated.
