Treating Newly Plastered Walls That Have not Been Painted for a Year

Probably yet another post about what to treat plastered walls with, so apologies if it's already covered.

My kitchen was plastered about a year ago, but we didn't get chance to finish it off before my son was born. He's had a few issues and we're only just getting round to decorating now.
The plaster is untreated since it went in, but we've been using the kitchen so it's been well steamed, splashed with water and grease, etc for the last year.

Is a standard mist coat or two all that is required, or should I be treating it with something else? It's quite a small room, and gets quite steamy when cooking so want to make sure I don't under-treat it, if that's possible. That and it having been untreated for so long, I'm just not sure what's best.
