Advice Needed on Cutting in a Ceiling

A lot of the online videos and advice I have seen about cutting in a ceiling tells you to paint on to the wall by about an inch, even if the wall is going to be painted a different colour. My question is what is the reason for this? Would you not be left with a ridge of uneven paint around the top of the wall? Would you sand this down before you paint the wall?

When cutting in / brushing in a ceiling you allow let say the white emulsion come onto the wall i/2 inch, then when you do the walls it shows exactly where to cut in with the wall colour dead tight to the ceiling, there should be no need to rub the walls down as long as you dont trowel the paint onto the wall when cutting in.

Take a metal cutting sawsall blade and cut it with aviation snips to thickness of the drywall, when making the cut do it at an angle like on the original blade.
You can cut away not having to worry about pipes or wires.
