Painting Soffits and Eaves in Major Renovation

We are working our way through the house with a major re-fit/decorating project but are a bit worried about the safety aspect of painting soffits and eaves ourselves - the height etc.
If we did get professionals in, what do you think should be minimum specification for painting soffits and eaves?
They need a good rubbing down (some bits had creeper on them and there are small traces left) and I would like an undercoat (we have Zinzer 1123 available - is that OK) and top coat.
But... how many of each to do a good job that won't flake off after a year or two? I don't know what is acceptable re. exterior paintwork.
The soffits are 3' wide, so it is not a small job (especially in terms of £££!).
