can I get coving to fit other than right angle meetings of wall and ceiling? I am looking for something like 120 degrees

it can be done but you would need a coving mitre box with angle finder. this is not a standard fixed mitre box, you might be able to do with standard 1 but they only usual have 2 different fixed angles.
