I want to fit a new shower cubicle in my ensuite with a low profile tray, which means i have to run the waste under the floor. There is enough room to do this but am very scepticle about cutting into the joists. Is there a regulation of how much you can cut out of a joist or is it against the regs to do this???

Here is a BCO guidance note on the subject. Its from Devon but they'll all be the same.

You should run the waste pipe parallel to the joists. Notching each one across the room for the pipe to run perpendicular to joists will seriously weaken the stucture.

If you have an outside wall in the room run parallel to the joists - go out through the wall and run your waste outside.
