Cables and thermal insulation

Hi
My kitchen has a brick wall which is about to be covered by 80mm thick insulation boards suspended in 100mm thick studwork, all covered with plasterboard.
I believe the cables should run horizontally and vertically through the centre of the studs (ie at 50mm deep) but this will bury them in the insulation.
Can you advise what the accepted method of running cables in a wall of this type?
