Socket Backbox Install on Dot and Dab Wall

Hi

I am looking to install a few new sockets on a dot and dab plasterboard wall with brick behind. I am looking to use double-gang sockets. Can anyone advise on the back-box depth that I should be using? Should I use the plastic ones for plasterboard or metal back-boxes?

Also, I am looking to put the wiring in (not connect it up as I respect electricity - even though I have knowledge/education in EE) upstairs while I have the flooring up. This will hopefully save me some money when I bring the lecky in. It will be wired into an existing ring or possibly a new ring to the CU. Should I be laying 2.5mm T&E?

To what extent is your knowledge?
Are up to date with the current requirements for socket outlet's additional protection and that of buried cable. Are you aware of the permitted safe zoning of cable?
