Coming from the ceiling the wires we have are

There is (Believe it or not) no such code/rule that says "The colours used in two way switching shall be..........."
And since you have no safe way of identifying what does what I would suggest you employ the services of a competent person to do the job safely for you.
It does NOT have to be an electrician, hence competent person.

I am very much a competent person. As I have replaced both living room lights and kitchen lights.
I have not come across a grey with blue sleeve?
I know that the browns are love blue neutral yellow green earth and black red sleeve is the switched live.

This is nothing personal so do not take it as such.
You appear to be confusing competence with experience, and changing two light fittings is not a lot of experience.
The Oxford English dictionary defines competence as "Having enough skill or knowledge to do something well or to the necessary standard"
You are out of your depth with this, and as I wish no harm to come to you or others through your error I still recommend you seek a competent person to do the job for you.

Mr white, I have now fitted the light fitting with no problems. Got a guide from another forum.
I totally understand what a competent is.
I believe myself to be such. As I have not only replaced 2 light fittings in my lifetime
