I first fixed the wiring as a mains switch and then wired from the dimmer switch to the 2 lamps.

I now want to add another lamp location before the ceiling is plastered.

Can I daisy chain the new lamp 3 from lamp 2 or do I need to wire it to the switch like the other 2?

Yes you can "daisy chain" from lamp 2. (Also from lamp 1 if you so desire)
