Cold system/Tourch on

Hi guys i would be very appreciative of some advice.
I am not a roofer but i have done some flat roofs in the past. The ones i have done are garages and i used a cold system where you prime the timber, lay an underlay on top then stick the capsheet on top of that. They came out well and are still good now.
But what my question is the diffence between this way and the tourch on that most professionals use. Is the tourch on application cheaper to install as well as it lasts longer?
