repairing concrete floor in football club changing room

i do a fair bit of diy and iv been asked a favour by my cash strapped football club so need to keep costs down.
the current floor is different levels because two rooms have been knocked into one but they are not far off however they want to slope the floor slightly the end furthest from the door down to the door just enough so that they can jet wash the floor and the water will run off out the bottom door.
how would you go about setting the sloping level?
should i unibond the floor?
what concrete mix should i use?
your help would be much apreciated.
