I have just laid my loc laminate on the existing carpet underlay (which is in very good condition) and new fibreboard laminate underlay. Obviously there is some movement in the boards, is this a problem? Are the boards designed to flex in this way?

Using carpet underlay would give you too much bounce on the laminate flooring. It is recommended you remove the carpet underlay and just use the fibreboard underlay. By the way, what type of subfloor do you have? If it's concrete, then you should also use a DPM. Hope it helps
