Levelling old floor joists

Hi,
We are trying to replace the floor in our spare room. The house is around 135 years old and it has had a raised chipboard floor fitted due to uneven floor joists. We would like to remove the raised floor and lay floorboards. What is the best way to level the joists? We have had a look at the relevant projects section which was helpful but does not quite cover our situation.

Remove the existing floor and fix joists onto the side of the existing joists to give you a level floor. Start from the highest point of the exisitng floor.
