Restore wooden block flooring

Throughout the ground floor of our new house we have wooden block flooring. It appears to be original but will all need to be pulled up as the various rooms need levelling where interior walls have been removed.

Could anyone help with:
1 What kind of wood are they? (suspect oak/pine?)
2 Advice on how best to level the floors - should I just take it all up and put a self levelling compound down? A builder said to level it with ply sheets of different thickness instead.
3 Any advice on the best way to remove nails, remove the bechamin and generally sand them back?
