Levelling a timber floor

I want to lay new flooring in a kitchen without taking out the units. The existing floor is high in the middle and forms a "ridge" along its length .It drops down either side to the side walls.
I need to raise the sides to make them level with the middle so I can lay the new flooring.
Can you help
