Foundations "Ready mixed" v's "manually mixed

I am currently having a rear extension build. 5m across extending 4m into garden. They are about 1.4 m deep. Builder plans to mix his own concrete and pour mnaually. Taking the size and depth into consideration surely this will take for ever? I am not in the trade so have no idea so perhaps not. If however this is the case taking that into consideration is it conceivable that certain layers/sections will begin to cure quicker then others. I know nothing about building but could this pose a problem if I effectively end up with a layered/sectioned foundation rather then a solid block.???

Do I need to worry or question?. Not trying to undermine in anyway just would appreictae any advise. Thanks

there is no problem mixing by hand for the foundation he will do it in a day,
