slaphead,
Assuming foot traffic only use dobs of a 4:1 sand cement under the new slabs. Grout the joins after set with the same mix.

Hi
If your are inexperienced at laying slabs the best method is,
find the highest point on the existing patio, this will be your starting level.
set up some screed rails allowing a 30mm bed above your highest point,
allow for falls required.
mix sharp sand and cement 4 to 1 mix (put through a mixer)slighty damp.
roughly spread the mix around, then level off by dragging a straight rail
over the screed rails leveling the mix .
lay slabs.
if pointing is required use 4 to 1 mix including fed mix and building sand
just mix workable amounts at a time making sure you gauge the mix every time.
Be aware of your new finished level and DPC on your house
