Rockwool Cladding Panels for Kitchen Extension

Hi chaps
New boy here so please be gentle with me.
I have built a single storey kitchen extension using hollow concrete blocks dry stacked and then filled the cores with concrete so effectively a solid wall, I am now looking at how to insulate and finish the outside of the building, and because I already have them could I clad the outside with 80mm rockwool steel clad sandwich panels and the to finish batten and slate over? If so would I need a vapour barrier anywhere or could I rely on the panels if I foil tape up the joins? Also do I need to leave a gap between the panels and the block or try to butt them together?
