Insulating the wall between floors?

Not something I’ve seen mentioned or discussed. I am upgrading the insulation on the 18” thick solid stone walls in the house by dry-lining with insulated plasterboard on the walls. Which covers the walls in the rooms. But there is a big chunk of wall between the floors which will send cold air between the ceiling below and the floor above (joists run perpendicular to the main walls). Do people take up the floorboards and insulate those bits of wall or if not what is the rationale for not doing it? Over the entire house it adds up to about 4m2 of uninsulated wall which is a lot.
