did a basic plastering course a couple of years ago, (4 Days) and have since done quite a bit of plastering for friends and family with very good results and no cracks.
recently i skimmed over some walls in my own house, its about 70 years old,
with lathe walls, pva 2 coats, skim 2 coats and everything was fine for around 6 months then started getting long hairline cracks.
what is the reason, and what is the best remedy, i.e on lathe type walls would it be better to completely remove the old lathe and replace with new boards.

A whole host of reasons for this, could be mix applied, suction from exisiting wall, or movement.
Lath and plaster unless you like the old methods, has had it's day and when you come across these walls they have usually had there day too. I'd always replace them!
