Orangery Construction - Treatment of Old Outside Wall Now Internal to Ensure its Still Breathable

We are building an Orangery onto an old stone house, therefore one old outside wall becomes internal. The question is will it breathe if plasterboarded and plastered? If not what would anyone recommend?

if its a stone wall, drylining it with plasterboard will be difficult to get it straight, and its not ideal, directly on stonework, its best to render and skim the wall, use a mix of lime cement and sand 6.1.1 ratio, base coat and then multi finish top coat
