Plastering pipe boxing after kitchen refurb

Hi everyone
I’ve just had my kitchen replastered - but the plaster refused to plaster pipework boxing because it was finished in timber. Hensuggested I paint it. I’m now considering replacing all the timber boxing with plasterboard, and getting a (different ) plasterer to finish it.
My questions are:
It is definitely not possible to plaster over the timber boxing?
And is it convention to plaster over boxing? The guy who did the plastering suggested painting was better as it was easier to access the pipework if it leaked...
