Getting rid of artex cieling in my utility room

hi all
wondering if i could get some help / advise
i want to get rid of this artex cieling in my utility room and take the roof up to the angled wood rafter bit, to give an angled ceiling a bit like a loft space
The construction seems to be a big support going right across with the rafters sitting on top so i am thinking i can just take the ceiling down
what i would like to do is all the grunt work / plaster boarding / insulating myself then get a plasterer in to plaster it
my question is, how do i handle the bits at the sides where the breeze blocks stop, do i have to breeze block that up? or can i just use plaster board and some sort of frame / fixing
