DRY LINING - DOT 'N' DAB

I AM IN THE PROCESS OF BUYING AN OLD TERRACED HOUSE THAT NEEDS TO BE GUTTED.
ONCE I HAVE REMOVED ALL THE BLACK MORTAR FROM STONE WALLS IN MY NEW HOUSE, CAN I APPLY 12.5MM PLASTERBOARD BY DOT 'N' DAB METHOD. CEILINGS ARE APPROX 3 METRES HIGH SO SHOULD THE JOINTS BE STAGGERED AS FOR CEILINGS OR NOT.

hi homejames, i'd always stagger ceiling joints, and with the walls being 3m high i'd consider staggering them too. unless you are using 3m boards of course.

sorry but trying to glean info on how to plaster from various related postings... My walls are 3.2m high and was hoping to dot and dab plasterboard onto walls in my bedroom which has very uneven and wonky old horse hair plaster (eg.plaster slopes away at the top of the walls). Think I might 'stagger' the joints on smaller plaster boards for the walls rather than use massive plasterboards (as I don't think I would be able life / hold them in position). Is there a technique to 'stagggering joints'?

Just like laying bricks Karen, start with a full board laid horizontally along the bottom then on the next "course" start with half a board or, if the first course finishes with a cut board at the other end of the room, then start the second course there with a full board.
