Replacing Kitchen Hot water tap

I recently had to replace my kitchen hot and cold taps.
I have a gravity fed system.
The cold was easy but the hot water tap wasn't.
I turned off the mains water, turned off the stop cock from the cold storage tap to the cylinder and opened the hot taps upstairs and down to empty the cylinder tank.
The kitchen hot water tap just didn't stop running, I left the hot water tap running for about an hour because I thought it would eventually stop but it didn't.

Am I missing something really simple?

Yes. It sounds like you didn't actualy turn off the cold feed to the hot water cylinder. If you had the hot water would have stopped pretty quickly. Check the connections from the cold water storage tank. If you have two connections the one slightly higer up the tank wall is the hot water cold feed. Either follow this pipe downwards to the airing cupboard (or where you have your cylinder) and turn off this valve) or if you are still having trouble, pop a cork in the outlet in the cold water storage cistern. Don't forget to remove it afterwards
