Confused DIY ER

Preparing for a bothroom re-design, first job to put tank in loft, hence the problem
The existing tank has the cold header tank on top, two hot outfeeds, and ? 1 cold outfeed that appears to come from the bottom of the cold header tank and feeds the downstairs system.
To add to the confusion, the immersion is at the bottom with what appears to be a temp probe half way up the tank, confusing :cry:
Can I do away with the cold feed from the header by plumbing into the mains.
Do I need a tank with a seperate temp probe capability.
Can anyone recomend a suitable tank, imersion combination.
Tank will only be required to serve four hand basins and the kitchen, but my wife uses an aweful lot of hot water !! :roll:
